I think I've read just about every gold 10 thread on here and am leaning towards changing out the 2 Z10's in my Maserati 2x10 for a pair of golds. I know speakers are such a personal preference, but can anyone describe what the change might sound like? Will I get more bottom end or lower mids with the golds? I still think the Z10's are great, just kind of in the mood to try something new.

It would be a bit of an expensive 'try something new'.
I used a 10" gold for a number of years with a Ghia. Golds are known for less bass and more upper mids. I'm not sure where Doc's 10's fall on the tone spectrum, but they've always been mentioned positively here on the forum. I've also had a 12" gold, and I must say, Celestion did a great job getting the same tone in the 10.
Personally, I wouldn't do it if "I still think the Z10's are great". You'll be looking at $430 (before taxes) for the pair.

I put a celestion 10” gold in my Ghia 1x10. I like it.
I have read on the forum over the years about members running one 10” gold with their Z-10, so when I found o guy selling (4) 10” 16 ohm golds for $100ea, I jumped on it. They were used, but I was willing to take the risk. I popped it in my 2x10 z convertible with the z-10. I love the sound. First of all I think Doc’s speakers are really great. I loved the 2x Z-10’s in my Maz 18 combo. The 2x10 convertible with that Maz just added more goodness. With the Therapy I wanted to change up that 2x10. I tried a Greenback and one of WGS’s version of a green back. It was different, I paired another celestion 10” with the green back ( VT-Jr.) that was ok. I was looking for a little more sparkle. The Gold gave me just what I was looking for. It’s been a while since I had the 2 z-10’s in the cabinet together, but after removing those 2 other celestion and pairing the z-10 and the gold I don’t see myself going back. I don’t know why I waited as long as I did. One day, I’ll pop the gold out and put the two z-10’s back together, but that won’t happen for a while.
Like John said 2 golds gets expensive. If you want to try something just buy one and pair it with the z-10. As I said earlier this came upon the advice of several others on the forum. IMO, they weren’t wrong.

+1 z10 with gold10 Z10 keeps the bottom end strong, gold adds a little flavor to the upper mids. Some alnico goodness. I like that setup in my ghia 2x10 combo.

I was never a fan of the Gold’s….in either 12 or 10 inch. The Z 10’s are tight, loud and clear. Great speakers…I went to Eminence Legend 10’s to get more grit and indie vibes with my Ghia, but over time I wished I had kept the Z 10 to re-hear….but I still love the Legends in both 12 and 10.

I have no experience with the z10 or the 10" gold, but I think the 12" gold is pretty special, and I would think a cab with 2 10" golds might be really cool. If you have the means and inquisition, I think it would be worth a shot. And maybe like John said, 1 in combination with the z10 might be just the ticket for you.

Thanks everyone for your feedback. I like the idea of maybe combining the Z10 and Gold as a best of both worlds solution. I normally try to buy used for these types of things so that I can mitigate some of the risk of losing money if it doesn't work out and want to sell later. Now I'll just have to figure out which side to mic during gigs.
