so I'm riding in the car with this head, and when going over bumps, the head makes this jingling noise. It's loud and annoying, and I really want to tour with this head, but I wouldn't last 2 hours in the car with this noise. Best way I can describe it is if you flicked a door stop inside of a wine glass, like you were making a toast.
I pulled off the back mesh gate thing and the tubes aren't loud or microphonic - the amp is fully functioning, and sounds great when being played. Just an "in the car" issue. I poked around inside trying to located the source, and it seems like it could be something inside the long metal box attached to the far side wall of the amp. Is that the reverb chamber?? Someone may be making toasts inside the reverb chamber.
How do I get this noise to go away?

It sounds like you may have identified the culprit as it sounds as if you have a reverb model. I am guessing that the noise you are hearing is from the reverb tank springs that are located in that long metal box attached to wall of the amp. Aside from removing the tank and dampening the springs for each of your travels, really nothing you can do. I wouldn't recommend removing and installing the tank all of the time, or at least I wouldn't do it. Plus what a pain. Maybe consider a Maz 38 Sr NR (non-reverb) amp head if the noise is something that will continue to bother you? You could always use a reverb pedal for your reverb needs while using a NR amp. I have a Sr reverb and really like having the reverb on board and tube driven. I also have a Wet reverb pedal I use with a different amp that sounds great too.

I don't think the reverb is that awesome, I use a pedal mostly. Maybe I'll just take out the reverb chamber

My first Z was MAZ 38. I didn't care for the reverb either but I was used to 40+ years of springy sounding Fenders. The MAZ was more subtle. If you don't like it and the noise bugs you that bad there's no reason you can't remove the tank. I can see where two hours of it would be annoying.

I transport my Maz 38 reverb head regularly and I've not had a problem with this, but thinking about it I always put it in the middle of the vehicle rather than over the wheels, so that could make a difference. Also, you maybe could just wrap it in a blanket or put it on something soft to dampen the noise.

The reverb isn't awesome eh, jingle jangle as you go down a bumpy road, you may have a broken spring in your reverb tank ( chamber ). Just sayin.

I transport my Maz 38 reverb head regularly and I've not had a problem with this, but thinking about it I always put it in the middle of the vehicle rather than over the wheels, so that could make a difference. Also, you maybe could just wrap it in a blanket or put it on something soft to dampen the noise. That's exactly what I used to do with my Maz 18 reverb head. Sat it in the middle of the car on a rolled up towel. Got the occasional "clank" over a bump but never harmed anything.

When I changed from a 38 to an 18 (for a volume reduction) I opted for a NR version because the reverb wasn't what I was used to. I have a MAZ 8 now and it ONLY comes with a reverb. I could leave it turned off but I think it works well turned up to the point where it just fills some space. Not really an audible effect that you are really aware of. Then I have another reverb effect pedal that I can kick in for that large hall or surf guitar sound if I want that. You might try running like that for awhile. I think it will help you to warm up to the MAZ style reverb.

Is this the doc himself? I feel foolish. I love your amps!!!!!! (ghia and maz 38 are the ones I've played) What I meant is that the reverb isn't as wet as I've experienced with some other amps. Not that I don't like it, but I have to use a pedal for extra reverb - and since it seems like this noise is coming from the reverb tank, I thought maybe i'll just take it out all together. But maybe something is broken in there.

Yep - you heard it straight from the Doc himself! That's what's great about this forum - Doc takes the time to respond to a number of issues. The reverb can differ from one model to another. Now if you REALLY love reverb you owe it to yourself to find a Z-Verb - it'll get as wet and springy as you can stand it!
