I received my brand new Maz Sr head a few weeks back. But I only started playing her last week when I received my new cab. This is what I am hearing, a hum when I plug my guitar cable into the head. At first I thought it was my guitar but I've eliminated that, as it still hums without it being plugged into the guitar. The hum is almost gone when I ground the cable with my fingers. The same goes with touching the strings on the guitar will also stop nearly all the hum. I have used several excellent quality cables with the same result To explain my set up I have 230 volt power as I'm in Australia. I am using a top quality step down transformer (up to 250 W) down to 110 volts. I am also using an Air Brake. I need some advice please. Is this normal to have this hum on this amp? Or do I have a grounding issue?

No Jasper the hum isn't normal. If it was this place would be filled with complaints about it.
It sure sounds like your step down transformer is not properly grounding your amp. Just for a test try swapping V1 with V2, both are JJ 12AX7's just to see if V1 is cause of the noise. But my feelings are a grounding problem you need to find a new power source and test again. If this is a new MAZ 38 why did you buy a USA Domestic 120V version? You needed a 240V Australian export version. What is the serial number, and were did you buy it ?
Also grounding the strings stops the Hum, well that sounds like a problem with your guitar as well. If the amp stops humming with the input properly grounded then I can't blame the amp.
