Is it possible to use different tubes in my Carmen Ghia head to make it break up sooner and sustain a bit more?

Try a 12ax7 in V1 instead of the 5751. Using a booster like a Fat Boost to up your guitar signal will also increase overdrive and sustain. Give it a try.

The jj ecc83s is a type of 12ax7 tube so it appears you have already done that. Other things to do would be hotter pickups in your guitar... especially if you are using a stat. Or raise the pickups higher so they have more output. Use humbuckers instead of single coils. I know your last choice is a pedal, but a bood booster like a fat boost, bad bob, java boost, beano boost etc. can do a lot to help.

Doesn't the Ghia normally have a 12ax7/ECC83 in V1? I think the 5751 is in V2...

I put in some Mullard EL84's and my amp is breaking up much earlier and has more sustain. It is much creamier. With my Keeley Java boost I am getting those Brian May tones pretty easy. The tubes really changed the character of my amp so much so, I am thinking of pulling them. I am a traditional blues player and these tubes keep dragging me off to rock and roll land.

You are correct the 5751 is in V2 sorry about that. For earlier breakup you can also go down to a #4 tube which will breakup earlier. Aside from that use humbuckers or bite the bullet and get a booster.

This question was Deja Vu for me. I just finished going through this whole scenario from tube subs to the air brake etc.
The bottom line is that these amps need pedals to get what you want. What many people want is the sound you get when you crank it all the way up but at a lower decibal level.
I got a Keeley compressor for a little gain boost and sustain and it works great. Doesn't screwup the tone.

Hey guys I just was tube swapping in my CG and looked at my tube chart. It has an ecc83 (12ax7) in V1 and a 5751 in v2. I'm sure you can put a 5751 in V1 if you want to mellow the amp out, but stock mine has the 12ax7. Do any of your tube charts put the 5751 in V1? My CG is about 4 months old.
