...but I don't know what it is!
I'd like to add another jack to my open back 212 Dr. Z cab so that I can run two amps (one through each 8 ohm speaker), but also have the ability to plug both speakers in at 4 ohm when i just want to use one amp.
What's the best way to do this?

Easy to do. Actually I just got done doing it to a 212 I have. Go to Radio Shack before they go out of business and get part number 274-0252. It's a 1/4" mono jack with an added normally closed switch. Run a jumper from the hot (tip) of your current switch to the switch contact for the new switch. It's the extra one that goes to the straight piece of metal in contact with the tip. Run the tip contact of the new switch to + on your second speaker. Run the ground contact to negative on your second speaker. Tie the grounds on both jacks together. Disconnect the current connection between both of your speakers. The + to + and - to - jumpers. Now if you go into your old jack you will get both speakers in parallel at 4 ohms. If you go into them both with two different amps they will each get one speaker. You also will find that if you go only into the new jack you will get the speaker it is attached to only at 8 ohms. If you want only the other speaker, put a dummy plug in the new jack and then the amp into the old jack and you will get only that one. Lots of versatility with this arrangement if you have two different speakers in the cab. Now you can run two amps into the same cab or with one amp you can get both or either speaker.

If your not handy with electronics you could buy a jack plate for stereo or mono operation like IN THIS LINK. Just need to mount it in the cab somewhere, or cut out your existing jack for this one to fit.
