How do you guys with the Convertible 112 cabs configure the open back for best results? Do you just remove the center, the bottom and center, or move the top section (w/speaker jack) to the bottom and remove the two top pieces?

Just remove the center is all that's needed. Works great.

Initially I didn't like it with just the center off. Loved a couple of the other combinations......really opened it up.
Taking off the center and bottom may have sounded the best to me....but added extended bass. Have to go back and try just the center off again to see if my ears were playing tricks with me.

I've only tried it with the center off. Sounded good enough that I've never thought about doing anything else.

I've tried a few different speakers in mine. There's a Gold in there now, and the center piece removed...generally I run it closed back with a ceramic speaker, and open back if it's alnico. I've never tried it with either the top or bottom slat removed.

Have to try it with the center and bottom removed. Extended bass and really opens it up imo.

I tried mine closed with my Creamback but it still sounded better with it opened.

I've also noticed that with open-back, it is affected somewhat by where it is in relationship to the wall, or whatever is behind the cab.
