My old JAZ and it's descendant, the Z-Lux, only have one input. I bet I know which sensitivity/impedance Doc selected to go with.

As a home player I find the Hi input sounds best. I am using both a G&L Legacy (Strat) and Les Paul Standard 50s. The LP has 57 Classic pups which are not super high gain but still have a touch more output than the G&L single coils. I set the preamp volume to be just on the brink of break-up with my clean signal. Then run my drive pedals to boost with a touch more gain. Master volume is then set to taste. The Hi input definitely seems to get you to overdrive and compression nicely at lower Master volumes. Low input is also brilliant if you want a nice rich clean sound. At either input this amp has so many great tones available it is all I need.
