So I have heard some say that the G12H is similar to the V30. I am surprised by this, since I find that when I played my Maz 18 jr. through my 2x12 closed back cab, they sounded very different from the G12H in my Maz. So in what ways DOES the G12H compare to the V30?

I thought I just read somewhere that the G12H30 was a "cross" between a V30 and a Greenback. Now, what that means, I'm not sure...

They're very different sounding IMHO. I don't hear any similarities, other than both having that hard to quantify, Celestion vibe.

They are very popular speakers to run together. I can't imagine they sound that similar or why match them to each other. Avatar speakers website has some pretty good descriptions of different speakers. They imply that the v30 is better on the top end and that the G12H is better on the low end. Therefore, combining these makes a great pair. I personally don't have any experience with this, that's just what I've read.
