I am replacing my Vox AC15H1TV with a DR Z. Which would you chose?

If the AC15 has plenty of volume and headroom for you, then I'd go with M12 or Maz. If you want it LOUD and very voxy, then the StangRay. I have both the M12 and Maz 18 NR. They are really different amps. They have some similarities tone-wise because they are both el84 equipped, but they are each their own thing. The 18 is quite a bit louder than the M12. But the M12 has a very simple control layout, and is really easy to dial in. The Maz series are some of the most versatile amps made by Doc. The M12 is made to be transparent and work with pedals, and it does.
So, this probably didn't help much, but you have a tough decision ahead of you. But either choice will be great!

I wholeheartedly agree with your decision to replace your AC with a Z, but i would be curious to hear why exactly you are wanting to do that. it may help us stear you in the right direction.

I love the chime from the AC15 and the grind but it breaks up a little to early Plus I want something a little more versatile. It would be nice to be able to dial in something close to the Vox tone but I would want the amp to more.

I don't have an AC15 to compare with, but I think you'd be happy with the Maz. It has some vox tonality, but can do so much more.

Like Jessim02, I too own a Maz 18 NR (head) and M12 (1x12 combo) and what he said is dead nuts. They're pretty different sounding amps. I use them both as pedal platforms, so I view them through those eyes. The Maz 18 is a lot louder and probably more versatile overall. I think it sounds a touch fatter and smoother with pedals too, but that may or may not be appropriate, given your speaker choice. I've paired the Maz 18 with certain speakers which didn't give me enough clarity whereas those same speakers with the M12 resulted in a perfect balance...and vice versa. I think the mids on the M12 tend to work a little better with the Strat SC "notch" positions, although the Maz mids can be dialed to be killer in that mode too while sacrificing some thickness for Dumbly HB pedal tones. I find the M12 tends to hit its pedal sweet spot sooner volumewise. The Maz 18 master volume adds some flexibility that the M12's single master doesn't provide, but the M12 magically sounds great with pedals at low levels without being able to tweak preamp gain with a MV setup. As for the Stang Ray, never played one, but believe it is the closest of the three to Vox land. They're all amazing amps and I could see owning more than one.

The StangRay will be way, WAY louder than your AC15.. and will never ever get as dirty, either. As for the M12 and MAZ.. well they're still pretty different (as others have said above). But my vote is for the MAZ 18 because it can cover a lot of territory—including Vox but much, much more. Plus you get your choice of Reverb and No Reverb models. Take your pick, you can't lose.
