Just thinking... volume seems to be the major issue with the Monza, how about a single EL84 version to bring down the power and volume but hopefully retain the character of the amp?
Alternatively (and please excuse the electronic illiteracy), is there a potential for damage if one of the EL84's are pulled out?

Never pull out a tube from a push-pull type of amp as the Monza is!!!!! If it were a dual single ended class A, I think you'd be able to do it, but not in this case. Anyway, you can always rely on an attenuator...

I've owned some EL84 Mesa Boogie models on which you could pull tubes and others for which the company said "no, don't do that." So your question is reasonable.
Andy has it correct for the Monza, and I believe this is true across all Z's EL84 amps and possibly the entire line.
