So I'm wanting to experiment with the SRZ-65 a little. I mostly want to take out some of the high-end (brightness) of the amp and reduce the pre-amp gain some; I'm looking at 5751's in place of the 12AX7's.
What brands and tube types should I be looking at to accomplish this?

Try a 12AX7R2 in V1 ... that will tame the midrange and high a bit. As far as gain .... an NOS 5751 has the same gain as most average current production 12AX7s that are typically down 25% and more on true gain. An average R2 (Sovtek 12AX7LPS) will have a gain of 80-85 about 90% of the time.

I was going to try that Sovtek in the Galaxie.
Maybe I'll put it in the SRZ to see what it does there.
