how loud can it really get
with a 2 12 cab and a 56

Loud enough.
I've been playing through my first Mini for the last few weeks and it's much louder than I anticipated, but in a good way.
I was thinking "bedroom levels". Not in my bedroom. Wife wouldn't stand for it. It starts breaking up early and gives up the goods at a lower volume level than my other Z amps.
Could you gig with it? I think yes. It's definately loud enough. Most gigs I do have me mic'd anyways so I'm getting enough db through the monitor if I'm not getting through the cab itself. The thing is, if you're a guitarist that wants to bring a pedal board to color your sound, then the canvas provided by your amp will be a little grainier at live levels than the cleans my Galaxie pumps out at the same level. But it's apples to oranges.
If I was heading to a gig that was just straight up 3 piece, 3 chord blues/rock where I wasn't as worried about the pedal board, I could take the mini-Z head and a 2x12 or 4x10 cab and be in heaven for the entire evening. Very cool little amp. Very loud considering it's a "mini"....

It really depends on your drummer. If you have a loud rock drummer, it's not going to be loud enough. It works with a loud drummer for practice, as long as you point the speaker at your head.

I have gigged with it several times. It's always loud enough to hear and I play with loud drummers. It's just a matter of what kind of tone you wanna hear, how "little" volume you can accept. If you're the kinda player who likes to hear their sound loud on stage then maybe not. But it's always audible. It definitely gets a little "thin" when the bass player turns up but miked it sounds wicked through a PA. It's a big sound out front.
A stack-o-four would be way cool.

This Mini Z head is 5 "Z" watts. IMO, it's plenty loud for a club gig. I usually mic my amps anyway for balance. This amp is like the Mazerati GT without the steroids! Especially thru a ZBest cab.

I didn´t wanna hear that the Mini Z is like the Mazerati GT even without the steroids. Now I am sure that I need one for home practice and small gigs. I hope to be satisfied the same with the "Baby GT" as I´m with his big brother the Mazerati GT.

I think it depens on the way the stage sounds -- some of them are real tight with very little wash, and others are real loose and reverberant. One some nights I've used mine with great success, and on other nights I start to lose it after my ears fatigue a little bit. However, it is alot of fun being able to go from clean to gain with a turn of the volume knob!!

In my opinion, it's not enough to hear over a loud drummer in any sized bar/club. You could always mic it.

I have the "old" combo with the stock Weber speaker in it. It's a terrific amp, but just not loud enough for me to play out with. Correct me if I'm wrong, but while you could use this amp to gig with, I don't think it was designed with that in mind.
To give you an idea of how loud I would need it to be, I played 3 gigs this weekend with an RxES into a 1x12 V30 and ran the volume at about 12:00. I just don't see how the un-mic'd Mini Z combo could ever be loud enough for your typical live rock show, regardless of speaker choice.
Maybe we're just too loud, but when I play out I like to play through an amp that doesn't need to be mic'd and can get loud enough for me to hear clearly on stage without monitors.
To each their own, but IMHO, the Mini Z is just a few dB's short of being "loud enough" for a live show unless you're playing in a coffee shop.
