Can you pull 2 power tubes (which ones?) to get a little less volume? I find that the amp doesn't really start to sing until I the volume and master are at 12. I was hoping to get this sound with a little less volume.

Z's amps don't operate like an old Twin Reverb. If you've got too much power on tap, try working with the master volume a bit. Z designs them to work after the PI so you don't lose tone at lower volumes. For even more authentic power tube grind, getcha an Air Brake or a Weber mini-Mass.
