I have a Cel Gold 1x12. I dont love it with the RXES, way too spikey for me. Any good Ceramic speaker that would work with the RXES? I play country through tele so high end is always an issue.

Two things: if your Gold isn't broken in it will be spikey.
That said, I like almost everything with the RXES. I have a couple of Weber ceramic Blue Dogs here in 50 watts that, once broken in, got real warm. The RXES sounds fabulous through those.

What is a faster way to break in a speaker? I keep hearing guys say running a drum machine throught the speaker. My question: How (Through a guitar amp, stereo amp, and at what volume)? I'd love to keep the Gold, It cost me a fortune!

I couldn't live with the Gold's high end response. Way too much for my tastes.
I swapped it out for a 50w Weber Alnico Blue Dog and I could tell right away that it was the speaker for me. I can easily imagine the ceramic version would sound great also.

50 watt Ceramic Blue dogs do sound great and would be a good choice if you're not liking the Gold... I like the Alnico blue dogs a little better in the open back cabs, but thats just my taste.
But I LOVE the Ceramic and the Alnico Silver bells in ANY CAB with the RX ES and RX JS. A little less chime than the Blue dog, MAN are they Sweet... could mix with a bluedog to taste.
Fav combo with an RX ES... 50 watt Alnico Bluedog / 50 watt Ceramic silverbell.
BUT FWIW I thought the Gold I played also sounded great with the RX too, but it was REALLY well broken in. LOTS of bite... in your face.
So...
I'd keep the gold for a while and how to break it in, simple... I'd just wail on it and crank it up as much as you can, it'll take a little time but it will break in. Then see if you like it better. If ya still don't like it, then you could try swapping for a Blue dog/ silver... and you can always sell the Gold to get your money back and pay for the weber.
