.... but my cab is a 16. Going up in ohms from the amp to the cab is supposed to be acceptable, correct?

With tube amps, it's always best for the cab to match the output setting on the amp.
If you play with the amp cranked, driving into a higher impedance load is worse than driving a lower impedance one, due to the way the voltages are reflected back through the transformer to the output tubes. Most amps will tolerate a 2 to 1 mismatch in either direction without a problem.
What kind of cabinet [ and individual speaker ohm ratings ] do you have? Many multiple speaker cabinets can be easily rewired to a lower connected impedance by using parallel or series-parallel wiring.
