Howdy,
I know my excellent Carmen Ghia is Cathode biased, which other Dr. Z amps are also Cathode biased?

All of the el84 designs are in addition to the Therapy, z-Plus, Jetta, Z-Lux, Cure and Z80, for sure. I think the CAZ is as well.

Also the MONZA is cathode biased.

Fwiw, I believe it is the case that some non-Z amps will operate with two of four power tubes pulled, but in general, nope. Is this meant for the other thread with the question on tube removal for power cutting? Or is it connected to Cathode bias somehow?
