So, let's say I've got an effect that draws 600mA. And let's say I've got a power supply that's got 5 100mA taps, and two each putting out 250mA and 500mA. To get to 600mA, would I have to plug my handy-dandy current doubler cable into both 500mA taps, or could I use one 500 and one 250, say?

You should be able use the 500 and the 250 together, I guess you technically could use the 500 and 100 but you would be right at max current so probably safer to go a little over.

I agree ^^^. Go safe than sorry.
I invested about $30 on the 1-Spot MA meter to measure what a pedal actually draws. For example, I found out the Strymon Brigadier only draws 200ma even though the manual says 250. Highly recommended!

The 500 and the 250 mA taps will give you what you need, the only concern is are the voltages of each tap the same? If they're in the same power supply with the same primary voltage supply (with accurately controlled voltage regulators that give the same output voltage) you'll be fine. It's ok if they are different sources if the voltages are the same.
The potential problem arises when one source is a different voltage, and then the higher current tap will try to pull the other source up or down to it's voltage.

I do know that the Truetone power supplies have a combined total maximum current output. That's like I have a 12 output power supply by them that has a total maximum current output of 3000 mA. Each of the taps has a mA rating for certification purposes, but as long as all the pedals are under 3000 mA, then you're good. At least that's what their documentation says. I still follow the ratings on the taps, just to be safe. It has 2 500 taps, 2 250 taps, 5 9V 100 taps, 2 18V 100 taps and then a 9V AC 800 tap.

Yeah, I like the power supply. It's nice that you don't have to be as nervous about going over a maximum current usage. The only thing I don't like is it's so dang tall!! Ha! Yep--it's a big boy. Tall and heavy. I mounted it under a new Pedaltrain Novo 24, though, which has plenty of clearance. It's a killer board--total overkill for 99.99% of any gigs we'd be likely to play--but it looks and sounds great, and I think the Plethora will be a cool addition.
