Recently got a Cure and loving it. I just wanted to get an idea of what each of the pre-amp tubes do. Of course the V1 is the V1 and has the most affect on the tone out of the three preamp tubes. I assume that the 12AX7 in the V2 is the phase inverter and the 12AT7 in V3 is for the effects loop. Do I have V2 and V3 correct or is it reversed?
I know it's not a huge question but I love to try to get to know my amps inside and out.

The AT7 is your phase inverter. The effects loop is not buffered. I believe (correct me if inaccurate) V2 is the cathode follower that drives the tone stack.

Does anyone know if you can sub a 12ax7 for the 12at7?

You can sub it without any problem. It may sound a bit different. Personally, I like the sound, I think it gives it a little more umph. Others don't like it. It's an old Fender trick I learned from Randall at Mesa many, many years ago.

It is my understanding that in most amps, V1 is usually the preamp tube closest to the input jack, and V2, the Phase Inverter, is the preamp tube that is closest to your output tubes. Positions beyond that serve a variety of other functions, like reverb, or tremolo/vibrato, or EFX loop, etc.
In addition, all 12A_7 and ECC series tubes are interchangeable, with varying results. Generally, 12AX7, 5751, and 12AY7 are considered more musically satisfying than 12AU7 and 12AT7 tubes. That is why the AU and AT versions usually come from the factory in auxiliary circuits, reverb, EFX, etc.
