I am looking for a compact, simply analog delay (or digital delay that can also emulate the darker tones of an analog) with around 3 knobs.
Looking at the Maxon AD-999 or Maxon Carbon Copy.
Any other suggestions to look at?

I think the MXR Carbon Copy would fit the bill perfectly. I have most of the Carbon Copy line ( I don't have the new mini yet). However, I'd get the new Mini Carbon Copy if I wanted one, simple pedal. I have the CC Mini on my gig board. I keep it "always on" and set to sit in the background. I don't use reverb. The CC works great!

I'm not a big delay guy, but I do have the MXR Carbon Copy and I like it.
I bought a Electro-Harmonix Canyon Delay about 6 months ago. It covers a lot of ground for a normal sized pedal. You can pick one up for around $100 or so. I've been using the shimmer delay setting, which is a pretty cool sound.

Another vote for MXR Carbon Copy. The regular one, not the "bright". For a simple analog delay, the MXR kills it. It also lets you add a bit of modulation to the delays which is nice on longer spacey tones. These days I use mine as a bit of slap-back and ts on most of the time. I might even buy a second one...

carbon copy is sweet...in a not in your face kind of way...adds some nice smooth voicing

I use the Mad Professor Deep Blue Delay, just three knobs and sounds perfect.

I use the DigiTech Obscura Altered Delay. Simple enough if you want but a few extras if you ever need, including tap tempo.

I had the Maxon AD99 and it was killer. Great, easy delay to use. Ate up some real estate on the board but it sounded good. Know lots of folks w the CC. It's a staple delay on most boards.
