Modding a Maz Jr. to have a Post Phase inverter MV? I'm thinking maybe that would be a viable route so as not to have to worry about external stuff.

No master volume affects the output tubes. Some other companies do things with the power supply and other tricks but almost all amps that have a MV are this sort. If you want to hear the output tubes distorting you need an Aibrake. But no MV or attenuator is going to give you the sound of the speakers straining. You can not get the full (pre-amp, power amp and speaker distortion) overdriven sound at lower volume. It's a compromise, that's why so many search out the better overdrive pedals.
