for those who have tried them. Can you tell me what your ears hear different between the old Maz V2 and the Stangray?

Are you talking about the Mazerati V2 or the Maz Jr/Sr?
I'm gonna take a stab and guess Mazerati......?
The Stangray is: More hi-fi sounding More scooped in the mids Can be a much brighter amp Has more low end available Can stay cleaner longer A little more tweakable with the Cut control
The Mazerati is: Rawer sounding Stronger mid-range A good low end, not as strong as the Ray but still really good Gets dirtier at the end of the dial A little better "pedal" amp than the Ray I found it a little dark for me, that's why I got rid of it... I like REALLY bright amps, and the Ray can get much brighter (or also be dark).
The Mazerati remindes me of the Normal input on an old AC30 (or my Hayseed normal channel), but a little brighter...... Where the Ray reminds me of the TopBoost side (but not as dirty).

The 'ray was a little too scooped and hifi for me. This helps a bit. I love the Ghia, but would like a higher power one in the arsenal.....

The V.1 Mazerati was designed by Dr. Z to be a "Double Powered" Ghia.... V.2 (2005 and up) has a different (bigger?) transformer which adds a bit wider bandwidth.... Which I interpret as more lows on the low side and highs on the high side, but still not as bright as a Stangray (or RxES, Maz Jr, Maz Sr, ect...). If you like the tone of the Ghia and the Ray was too scooped and hi-fi for you..... The Mazerati is the amp you are describing that you are looking for. I think you'd be happy with either version.
