Looking for an uprage version of my Fender Blues Deluxe, love the EZG but i'm concerned about the day i need to replace the NOS tubes. Would this amp sound as good without them?

I think "uprage" is a fun way of describing the transition from a Blues Deluxe to an EZG!!!
As to the NOS tubes question, I believe the amp ships with mostly new tubes except for the NOS V2 & V4 12 AT7 tubes. This is no big deal b/c these are still plentiful and sell for as little as $10-$15 per tube online. So you can easily continue to use NOS tubes for years to come with little extra expense.
In regard to NOS vs New tubes...well, there are way to many opinions out there to dissect here. To my ears, having used many of both in many amps, the sounds between the two are often only slightly different. And since you are only talking about a V2 NOS and V2 new tube (not power tubes)... it really would depend on your ears and all the other factors (speaker choice, cabinet configuration, other tubes in amp, etc.) Hope that helps,
Cheers!

start buying those spares NOW. they are plenty still but when you find a tube that you really like of love in any particular spot, jump on them....well worth it in the end I think. You spend a zillion$$$$$ trying to get there when you could have just laid down the $$$$ in the first place. Saves time, trouble, messing round, and tone! just my .02 worth as always chey

Mine's got new-production 12AX7's and NOS AT7's. It also shipped with 6L6 Svetlana Winged "C"s.
When I got it, I was devastated at how great it sounded. I thought, "I wonder how much better it would sound with RCA blackplate 6L6's?" So, having had money for such things back then, I bought a very expensive matched pair of NOS RCA's.
I put them in and rebiased...and after testing put the winged "C"s back in. It was no contest...the "C"s just had a better top end and midrange in the EZG. The RCA's kill in my other amps but the EZG really likes the "C"s. Doc tunes his amps to sound the best they can with new production tubes and it shows.

I'm with you Phil....same thing, tried all kinds of old NOS tubes in mine, and I have a boat load ! Went right back to the originals. If I'm not mistaken, it was designed with current day tubes in mind. Still, no harm in experimenting, but DRZ usually get's it right . I will say that the Sevtlana's sound great...They hold up with the GE;s neck and neck in my book ! Have fun !
