... I noticed in the Dave Baker EMS med/high gain demo video that the cabinet had the removable center section to open it up a bit. So, my 2x12 lacks that feature. Any harm or warranty voiding concerns created by removing the entire back? I assume the tone won't be a tight sounding, but not sure that would be a turn off.

No harm in experimenting. You won't void an amp/speaker warranty by opening up the cab.
I'm not an expert on cabinet designs, but most open backs are not full open backs. You can always experiment, but the full open probably won't be what you're looking for.

If you take the back completely off then the sound may fall apart and get too woofy.
I had Mather Amp Cabs make me a convertible back that came in three pieces. I actually use the removable piece quite often.

Is simply cutting the current back panel into thirds so the middle can be removed completely ridiculous?

Brian, did Pete make you a convertible back for your existing Z cab or a whole new cab? I had him make just the back piece. You have to guarantee dimensions. I have had him make Valances as well.

Is simply cutting the current back panel into thirds so the middle can be removed completely ridiculous? If it sounds good removed, I may just get a sheet of void free plywood or solid pine boards and cut my own. Retain the original in the event of future sale. It won't be tolexed, but the bare wall that sees it probably won't mind. 😁

Dave definitely used the cabinet in it's closed back configuration in that demo. That may have been in the early stages of design, as we discovered a lot of vibrations coming from the center panel and opted for a solid closed back in the final design of the cabinet. It tightened up the bass response and stopped the vibrations coming from the convertible panels. A solid back panel is also truer to the traditional "Marshall" sound. Removing the back panel won't void any warranties, but realize the input jack of the speakers are secured to the panel. I can't imagine a detuned cab like this will sound very good. But, as they say, YMMV.
