Do I want a pair of golds in my Maz 38 2x12? Mine has the v30 and g12h. I love how my maz sounds now but, I've always been curious about the gold. Also, I've considered a blue and a gold like in the Z wreck cabs. Has anyone had a maz both ways and able to offer a little insight? Is it worth the price of admission?

Golds and blues are really awesome, and well-worth the price of admission imho.
But you might want to consider the new Celestion Ruby(s)....Halfway between a gold and a blue!

If I go gold/blue, how do I need to wire them to 1, be safe so the Maz wont blow the blue and 2, achieve an 8 ohm load. I plan to put them in a cab that I use with my Maz, Mazerati and, Carmen Ghia. The Ghia only has an 8 ohm tap.

Get two 16 ohm models and wire them in parallel for a total of 8 ohms. You will then have a 30 watt cabinet of goodness.

The 38 also sounds great with a pair of greenbacks. I have a Maz Invasion combo with them - rock and roll heaven.

I had a blue\gold cab for a while with my Z-28. Nice pairing but be aware that with the 15 watt blue, you will only have a 30 watt cab which might be a bit under powered with the Maz 38 depending on how you use it.
edited to add - If you go the expensive route of any combination of the Gold and Blue, I would suggest getting them in 8 ohms and wiring them parallel for a 4 ohm load. Down the road, if you decide to sell them, it's a lot easier to sell an 8 ohm speaker than a 16 ohm. Just a suggestion.

Having a pair of golds or blues ....and then end up not liking it as much will be an expensive lesson. The V30/G12H combo is a really good pairing. And I will second the two greenbacks. They'll be close to the blue-gold tone.

The v-30 to me is very shrill. On the other hand the 12H30 to me is a wonderful sounding speaker. Pair that one with a gold and I think you would like it.

I've have gone through a Maz 18 2x10 combo, a Maz 18 head with a Z-best cab containing a V30 and G12H230, and a Maz 18 1x12 combo with a G12H30. While they all had their charms, the best--the best--Maz sound I ever got was when I plugged the Maz head into the speakers in my other guitar player's Fargen open-back 2x12 combo. Those speakers were a Weber Blue Dog and a Weber Silver Bell. It's been ages, but I'm fairly confident both were the ceramic versions.
