Was looking at creambacks (65 watt, 12") on amazon and noticed that the 16ohm version is about $8 more than the 8ohm version (same power handling, identical except ohms). Is that simply because you can wire a pair of the 16ohms to end up with an 8ohm cabinet, versus a pair of the 8ohms where you'd either have to with a 16ohm cab or a 4ohm cab? I suppose an 8ohm cabinet might be more desirable since it would work with more amps (except marshals that seem to like 16ohms). Seems odd they price those differently at all ... but I've never understood marketing types.

Amazon is a different animal altogether. They run pricing aggregates on pretty much everything, so let's just say they saw the 16 ohm on sale at one major retailer, they'll lower their price on that item alone. And yes, they do check third party sites like eBay and Reverb.
Amazon doesn't care about MAP when they fulfill the orders, even if it's sold by the original manufacturer.
