There are quite a lot of ways to practice while using headphones (amps that have headphone jack, mesa cabclone and similar devices) but I was wondering if the headphones should be closed back or open back? I wonder if the sound of your pick hitting the strings can maybe be distracting if you're using open back headphones. On the other hand, maybe closed back headphones just don't sound right for guitar? Really curious to hear peoples thoughts on closed back vs open back for guitar playing

You might be overthinking this a bit. The biggest key is to use good headphones. I have both, but for recording, generally am used to closed headphones and mostly use them for everything, but I also have open ones that are fine for practicing. I use headphones for 95+% of my playing, but, of course, there's nothing like using an amp.

They will both sound fine, but you should consider if you plan to use them for recording, the open back style will leak audio to a vocal mic. Thus for my studio I always prefer the closed style.

I use closed back when recording, and leave one ear partially uncovered to hear the amp in the room. When practicing drums I leave both ears partially uncovered, when tracking drums I cover all the way. as far as practicing guitar with headphones on,closed back both ears covered.
