The 12" Greenback I have sounds great. Has some chime to it, but is neutral enough to represent what your pedals are throwing at it.
But, if you want to skip the pedals, turn all 3 knobs up to 2 or 3 o'clock and let her rip (without blowing out your eardrums)! Though marketed as a pedal platform amp, it's really a superb sounding dry amp at reasonable volume levels as well :-)

I have head and 1x12 cab cab came with celestion 70th liked it but put a gold in and it really turn this thing around.... wasn't gonna put gold but decided to cause I'm planning on buying a z wreck or DB4 and the gold would suit both... love love love this amp play on high setting volume at noon bass 2ish amd treble at 10 love it

I tried many different speakers at first, but quickly settled on a Scumback M75-PVC (which is basically an expensive variant of the good ol' Celestion Greenback).
For cheaper, I'd suggest the Greenback itself or a WGS Green Beret; for more expensive, you can't beat a Scumback M75. But really, if it's got a small magnet & British cone, it'll work great.

My 1-12 cabinet contains a WGS Reaper HP. Which WGS equates to a Celestion G12H30 I believe. Have really been wondering about the Gold with this Head.

I have tried the WGS Green Beret, and it was pretty rad, but I have settled on the Scumback Scumnico, it has a nice chime to it, but it is not ice pick in nature.

+1 on the Scumback M75. I tried a greenback, G12H30, Alnico Blue, and a mojotone BV25. The scumback made the OD pedals sound the best while still having a killer clean tone, to my ear anyway.

I've been running mine through a /13 2X12 loaded with a blue and G12H30. I'm waiting on a special cable to split the signal so I can run both at the same time...but the each sound pretty good. I might give the blue an a slight edge in bringing out a slight voxy character to the amp.

Weber 50 Watt Grey Wolf (basically a Silver Bell with a V30 cone) is incredible with every Z I've tried but Especially the RX Series (jr and Sr) and the best speaker I've used the M12 with.
and, the Z 12 was right up there with the Grey wolf... also a GREAT pairing.
Even the Emi tonker sounded really good with the M12 and much louder if needed.
In the 10" the red fang in the 1x10 combo was about as good as anything and a wonderful grab n go size....
Not surprising the scumbacks work well, along with the greenbacks... also any lower wattage (15 watts / Blue) lively Alnico's are sweet... but the Gold did as well as Tone Tubby Alnico's are a bit soother and warmer with a bit of chime...
I have not tried a speaker yet that actually sounds "bad" with the M12... just different.
IMHO, You can tweek the sound of the M12 with Speakers just like you can pedals, and if you want to really hear the differences in various speakers (just like with pedals) the M12 is a good way to do that too...
it's a good speaker platform as well as a pedal platform...

I have an Avatar 1X12 loaded with the Eminence Patriot Red, White and Blues I pulled out of my Fuchs combo. The Fuchs got a Scumback M-75 (what a coincidence!) to give it a little more kick in the low end. That Eminence sounds pretty cool with the M12, though.

As others have said, I think you'd have a hard time finding a speaker that didn't sound good with this Swiss army amp.
Personally, I run my M12 head through a 1x12 Z Cab loaded with a Celestion Cream Alnico and it sounds magnificent.
It's got a great pronounced low end yet still has great high end clarity and chime. It's hard to explain without being in the same room and hearing it for yourself but it's like all of the frequencies (lows, mids, and highs) are very present and pronounced. Just with magical fairy dust sprinkled on them. It's just got this mojo to it that gives me a gear-boner pretty much every time I play it.

The cab that most often sits under my M12 sports a Gold. Others that sometimes occupy that spot have Z-10"s, Weber Silver AlNiCo 10"s, and a Celestion Heritage G12-65.

I've got a 4x10 z cab that resides under my m12, 2 z speakers, 2 golds. The cab and speakers sounds great as a whole, but the mic always goes in front of the gold if its needed.
I've got a 10 inch greenback that I'd like to try but never have. Don't want to fix what isn't broken I guess.

I've got the 112 combo with a celestion creamback. Nice clear tone with good low end. Tried a greenback and an eminence c Rex, those worked great as well. The c Rex gives the amp a bigger low end and requires you to turn up the treble a bit. It's somewhat of a darker sounding speaker. I'd take any of them but I kept the creamback in there. That's the nature of the M12, supposed to be pedal friendly, but it's also speaker friendly!!

I used my M12 with a G12H30 cab for a couple years before switching to an Alnico Cream (AC). The H30 sounded good enough for me to fall in love with the M12, but I wondered how a speaker that was less scooped in the mids and less boomy in the bass would sound. An alnico of some sort was on my radar, but it was hard for me to justify dropping that much on a speaker. Eventually, I broke down and used Sweetwater's 0% deal to try the AC which, from what I'd read, seemed it fit the bill. I'm glad I gave it a shot.
It wasn't everything I'd dreamed of at first, but after some break-in time, I feel it addresses the complaints I had with the H30 and some I didn't. More specifically, the highs of the H30 didn't seem harsh to me, but the AC's are certainly "sweeter" resulting in much more usability on the treble knob. For me, the AC gives the M12 a more balanced tone, which is what I was going for, but I could absolutely see someone preferring the H30 instead.

Reviving an old thread here. I swapped a 12" Gold into my M12 yesterday, replacing the stock Greenback. Very happy so far. The greenback was too bright at the top and too floppy at the bottom. The Gold smoothed out the brights, boosted the mids, and tightened up the bass. The basic clean tone with the Gold is much more pleasing.

I was looking for a speaker that sounded similar to the Greenback that came in my M12 combo, but less flubby. After experimenting with many different models from Eminence and Celestion (including Blue and Gold), I settled on the Celestion G12 Neo Creamback. For me, it's a perfect match; plus, the amp is now a few pounds lighter.

I have an open back 2x12 with a Blue and G12H30. Pushes things a tad more Vox-y. Then a closed back 1x12 with greenback for warmer rock n roll tones. Planning to upgrade the greenie to a creamback this Christmas for a touch more low end fullness.
They are all great. Hard to pick a favorite with the M12.

Tried running my M12 head at first with a 210 (Cannabis Rex + Lil' Bubby) but now use a 212 Z-Best cab (V30 + G12H). Like night and day.

I'm using a Celestion Alnico Cream 12" in an open back cabinet. It's a lot of speaker for a 12 watt amp, but the Cream sounds great any any volume.
I also found if you crank the M12 it can get a little fizzy, if your pushing it with drive pedals. The Alnico smooths out that fizz some. I suspect a Gold would sound great too.

So, a bit of an update: I've also used that selfsame Scumback M-75 and a Scumback Scumnico, and they both sound phenomenal. The M12 excels in bringing out the best of a speaker as well as the best of your pedals.
