At the moment I'm using a stock 2X12 open back Z cab with my Therapy and am really happy with the speakers, even knowing there are better speaker options. I'm about to buy a 1X12 Z cab for smaller rooms and portability. If I ever decided to run both cabs at the same time how would I do this? Is there a Y type speaker cable to buy? If both cabs are 8 ohms would this mean I plug into the 4 or 8 ohm jack on the head? I'm really new to the whole head/cab thing and have always been a combo guy.

You need a "Y" adapter. You can the best there is right here from Todd, Pro Cables and Sound, PCNS. You would plug your 2 8 ohm cabinets to the 4 ohm tap. Good luck, and have fun.

I have run mine through a Mesa 1x12 open back cab and a 2x12 cab with Vin30s for larger venues; it sounded terrific.

Do I need to order standard parallel or in series when running these two Z cabs from my Therapy?

Most likely you'll want the "normal" parallel cable to hook up two 8-ohm cabs, thereby showing a 4-ohm load to your amp.
If you proceed, just make sure you remember to use the correct impedance output jack on your amp, especially if you're making a switch from a one-cab setup to two and vice versa. I've gotten into the habit of unplugging my speaker cab after use. Since I have 4- and 8-ohm cabs doing this reduces the chances of me doing something stupid.
