I just pickup one of those little 5w Fender Champion 600s with the 6" speaker. The speaker is rated at 15w/4ohm and will take forever to break in with the 5w amp.
I want to use my the 4ohm tap from my Maz Jr. NR to break in the speaker, but I've heard the Maz puts out about 22-24 watts when dimed.
What would be a good way of setting the Maz Jr. to get the 15w speaker cone moving without risking frying it?

Call me crazy, but rather than risk making black snow, I'd just play the Champion until the speaker breaks in.
Naturally the Maz will sound better, but horses for courses, I say...

Breaking in a 15w speaker with a 5w amp takes forever. I was hoping to use the Maz to cheat. If I bust the OEM speaker, I can always spend $15 on a Jensen Mod 6-15 to replace it (which will probably sound better anyway). I'm just trying to gauge a safe level to give it more than 5w of power for an hour or 2 without popping it. I figure i'll go all noon with my controls and that should do it. If it goes, it gets replaced.

turned up to 5 watts is Loud...Big Time Loud in a house
I break mine in with an old 120 watt stereo....obviously NOT DIMED
I also have a Macintosh amp with power meters, and have never had it up that to 5 watts. The extra wattage of high power amps gives them more ooomph, and they can drive the good speakers without getting flabby but you never actually use 100watts out in a house
the Maz will work fine, and so will the Champ, but I'd use a stereo as it's less wear on the tubes.

I would think there will not be much difference in the before and after sound of the speaker. I've got a real Champ 600, only mine is the second version with the tweed cab and brown linen grille. It's got the original Cletron 6" speaker. It's over 50 years old and still sounds like a 6" speaker. It's a little quieter overall than my '59 tweed Champ with an 8" speaker, probably due to the lower efficiency of the 6". You have to really crank the home stereo to drown out either amp so three to four watts is plenty in the living room.

More dimension to the highs. They sound a little looser and more natural. But it is nowhere near the difference i could hear after breaking in the Greenback in my Maz. Jr.

Much more than three times faster. If you run the cone with some good punchy tones near its capacity you can break it in significantly quicker and more thoroughly than getting it to move lightly with lower wattage. Before this amp, I had a Victoria Champ copy (recently traded for a Gretsch) and that 5w amp barely had any effect on its 8" 25w speaker. 2 years of playing everyday and the speaker never really loosened up. One day I decided to plug it into the Maz, wrap the little cabinet in blankets, and play full blast for about 2 hours. I plugged the Victoria back into the speaker and it was a MASSIVE difference in the richness of its tone. Rather than play through my new amp with the stiff speaker for another 2 years to see if it would loosen up the old fashioned way, I wanted to cheat the same way I was rewarded the first time. I did and it works.

That's most likely because it was a better speaker to start with, IMO.
